Chia Pomodoro

3 cups fresh tomatoes, chopped (or 3 tbs. Quantum Tomato Concentrate)
1/2 of a red bell pepper, chopped
3 tbs. Sunfire hemp seeds
3 tbs. Sunfire Fiesta Molé
2 tbs. nutritional yeast (I like Quantum Nutritional Yeast)
2 tsp. coconut oil
1 tsp. raw apple cider vinegar
3/4 tsp. Sunfire Salt
1/4 tsp. Italian seasoning
1/8 tsp. black pepper
1/8 tsp. cayenne
1/2 cup pure water (if using Quantum Tomato Powder increase to 2½ cups)
1/2 cup Sunfire chia seeds

Place all ingredients except chia seeds in a high powered blender. Blend on high until smooth. Add chia seeds and blend briefly on slow speed until evenly distributed. Be careful not to over-blend. Chia seeds should remain whole and intact. Pour into quart jar or bowl and place in refrigerator to set – 20 minutes or longer. Keep refrigerated until ready to serve. Will stay fresh for up to 7 days or longer.

Yield: 8 – 12 servings
